Potato Zucchini Sausage Skillet





This is a hearty and filling meal that goes on the table in 30 minutes or less. I used Aidells fully cooked chicken & apple smoked sausage from Costco because it is all natural  made with chicken raised with no antibiotics and also gluten free and no nitrites. It's Whole30 compliant and delicious but you can use any sausage to your liking. It was a great comfort meal for a rainy day. I served homemade apple sauce with it.




Ingredients:
Olive oil for pan
3 sausages (sliced) I used Aidells chicken & apple (Costco) It's fully cooked.
Fresh or frozen onions and bell peppers (how ever many you want) I used frozen from Trader Joe's.
mini potatoes (I used 12, which would be 4 each, size of a golf ball)
3 zucchini (sliced)
sea salt,  pepper and garlic powder if you choose

Directions:
Slice potatoes, sausage and zucchini.

Place potatoes in a dish with 2-3 tablespoons water- microwave for 6 minutes on high until fork tender.

In large skillet or pan saute onions and peppers in olive oil until onions begin to soften.

Add potatoes, sausage, and zucchini. Season (now or later) and cook another 5-7 minutes until browned and heated through.



Serves 3 (to serve more adjust ingredients accordingly).
