Put a little surprise in your traditional oatmeal raisin cookies and add chocolate covered raisins. I used a two tablespoon scoop for these cookies and they were the perfect size but if you prefer smaller cookies by all means use a smaller scoop. If you don't want to take the time for that you can also make bar cookies and add a drizzle of glaze to fancy them up after they are baked.
Oatmeal Raisin Cookies
1/2 cup butter, softened
1/2 cup shortening
3/4 cup light brown sugar
3/4 cup granulated sugar
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon salt
Beat into butter mixture until well mixed.
1/4 cup whole milk
Beat into mixture until blended.
2 cups all purpose flour
2 cups rolled oats OR quick oats (I like rolled oats better)
one 11 oz. package chocolate covered raisins. (I used Raisinets)
Stir in. (Add 1/2 cup nuts if desired)
Bake at 375 degrees for 10-12 minutes.
Can freeze dough scoops for later. When you bake frozen dough bake at a lower temperature of 325 for 18-20 minutes.
Makes 30 cookies.
** If you want plain oatmeal raisin cookies just use 2 cups raisins in place of Raisinets.
