Buttermilk Pancakes



You will never want to eat pancakes from a box mix ever again after you taste these.  They are as light as a feather and very simple to make.  This recipe makes about ten good size pancakes.

Buttermilk Pancakes

1 cup flour
1 T. sugar
1 t. baking powder
1/4 t. baking soda
1/4 t. salt
1 egg
1 cup low fat buttermilk or sour milk (I always use buttermilk)
2 T. oil

Whisk all ingredients until combined and creamy.  Make sure you preheat your griddle or pan (preferably a non stick pan, no butter or oil needed) before you pour your first pancakes.  I use a cookie scoop or you can use an ice cream scoop to make sure all the pancakes are the same size.  Let most of the bubbles on top of the pancake pop before you flip them.
