Dilly Casserole Bread/Apple Cheese Pannini



If you like a crusty hearty bread than this bread is for you.  It's a bread that has alot of flavor.  It goes especially well with soup, chili, or stew.  As you can see by the picture it makes a great pannini sandwich. This is an apple and coldby jack cheese grilled sandwich.  This is the first time I have used apple on a sandwich, it's a Delicious apple from my tree.  I loved how the apple softened just perfectly when it was grilled. Slice the apples very thin and just one layer will do.  The colby jack cheese was fantastic and gooey and complemented the apple but the bread really made the sandwich. I don't know where this bread recipe originated as I have been making it for years.

Dilly Casserole Bread

3 cups all purpose flour
2 T. sugar
1T. instant minced onion or dryed minced shallots.  (I used shallots from World Market)
2 t. dill seed
1 1/4 t. salt
1/4 t. baking soda
1 pkg. dry yeast (I used quick rise, there is 1 T. in a pkg.)
1 cup cottage cheese
1/4 cup water
1 T. butter
1 egg

Combine 1 cup flour, sugar, onion, dill, salt, soda and yeast in your mixer bowl. (I used my KitchenAid with a dough hook)

In a saucepan heat cottage cheese, water and butter until warm.

Add egg and warm liquid to flour mixture.  Blend in mixer at lowest speed until moist.  Beat 3 minutes at medium speed.

Beat in remaining flour to form stiff dough.

Cover till double in size, about 1 hr.  Punch down and put in a greased 8 inch casserole dish (1 1/2 to 2 qt.).  Cover and rise 30 to 45 minutes.  Bake 350 for 30 min.  Brush with butter and course salt.
