Sweet Potato Apple Soup
I thought the winter here in Utah wasn't too bad so far this year and then bam down went the temps and on came the snow and the soup went on. Talk about a white Christmas. I'm really not a soup person unless it's homemade and I know exactly what's in it. Especially don't want all the sodium that go with canned soups. I call them dish water soup, why I don't know. We love this soup. Rich, creamy and full of flavor and easy to make. Great for a first course if your having a nice dinner or my favorite when you want a light warm lunch. If your opposed to the cream you can leave it out. I have made it both ways and it's good either way.
Sweet Potato Apple Soup
1 large sweet potato
1 apple
1/4 onion
olive oil
sprinkle of celery seed
1 Tablespoon butter
2 cups chicken stock
1/3 cup cream
1 teaspoon brown sugar
salt & pepper to taste
Peel and chop sweet potato, apple and onion and saute in olive oil for 10 minutes. Add butter, celery seed, brown sugar, salt and pepper, and chicken stock. Simmer until it softens and reduces. About 30 minutes. Blend in blender or with an immersion blender and add cream. Makes 3 1/2 cups or so depending on the size of the sweet potato. It is rich and wonderful and goes a long way. Garnish as you please.
