Becky's Broccoli Cauliflower Salad

You all know what a sweet tooth I am with all the desserts I post but this is a recipe to get you back on track.  Now that I have said I'm a sweet tooth those who really know me know that I am a real veggie lover also.  This is a great healthy winter side dish and oh so light in the carb category.  The Paul Newman Poppy Seed Dressing has only 5 carbs in 2 tablespoons.  It's even better after it sits a while and marinates.  I got this recipe from my Bunco Buddie Becky. 




Broccoli Cauliflower Salad

1 small head cauliflower (chopped fine)
1 large bunch of broccoli (chopped fine)
1/4 to 1/2 chopped fine red onion (depending on your taste)
1 1/2 cups grated mozzarella cheese
1/4 cup Paul Newman's poppyseed dressing
1/2 cup craisins
1/2 cup sunflower seeds
6 slices bacon (nuke in microwave, then chop)

Chop cauliflower, broccoli and red onion finely and add to bowl.
Grate mozzarella cheese and add to bowl.
Add craisins, sunflower seeds to bowl.
Nuke bacon wrapped in paper towel on paper plate until crisp, chop and add to bowl.
Add dressing and mix thoroughly.

How easy is that.  Can be made way ahead of time.  Cover and refrigerate because it's better when it's cold.
