Oatmeal Snacking Cake
This is one of those cakes you can easily whip up on a chilly evening. Me, I'm hoping the chilly evenings are almost over. Anyway, This is a recipe that you probably have all the ingredients already in your cupboard especially if you are making the cake without the frosting which I have done. I've just sprinkled a little powdered sugar on it.
Cake
1/2 cup oatmeal
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
3/4 cup boiling water
1/4 teaspoon salt
1/2 teaspoon vanilla
1/4 cup butter (1/2 stick)
1/2 cup brown sugar
1/2 cup white sugar
1 egg
1/2 cup plus 1/8 cup flour
1/2 teaspoon baking soda
Boil water, then add oatmeal, cinnamon and nutmeg. Set aside for 10 minutes.
Cream butter, add sugars and beat until fluffy. Blend in vanilla and egg. Whisk flour, baking soda and salt and add to butter mixture. Blend in oatmeal mixture, mix well.
Pour into 8 by 8 greased glass baking dish. Bake at 350 for 30 minutes.
NOTE: This is a half recipe I used here. Simply double all ingredients if you want a 13 X 9 dish. Also double for the frosting. May have to adjust baking time.
Frosting
1/4 cup butter
1/4 cup milk
1/2 cup brown sugar
1/2 cup chopped pecans
1/2 cup coconut
Melt butter in saucepan. Add remaining ingredients and mix well. Spread on warm, baked cake.
