Chocolate PB Cupcakes



If your Dad or Husband loves the chocolate peanut butter combination and you make these cupcakes for him on Father's Day I guarantee he will love you more today than he did yesterday.  Talking about Father's Day I know I'm a little ahead in my holidays but this would also make a great dessert for your Memorial Day Bar-B-Que this weekend as well.  The chocolate cake is rich and moist topped with a peanut butter cream cheese frosting that is oh so good.  For someone who doesn't like peanut butter cups all that much I sure enjoy these cupcakes.  Add a few chocolate shavings and it makes a delightful picture.

Chocolate Cupcakes 

1 cup sugar
1 cup flour
1/3 cup unsweetened cocoa (I used Hershey's)
3/4 teaspoon baking powder
3/4 teaspoon baking soda
1/2 teaspoon salt
1 large egg
1/2 cup melted butter
1/2 cup low fat buttermilk
1 1/2 teaspoons vanilla
1/2 cup boiling water

In mixer bowl combine sugar, flour, cocoa, baking powder, baking soda, salt and whisk.  Add wet ingredients and mix until smooth.

Bake on 350 for 18-20 minutes depending on your oven.  Cupcakes need to be totally cooled before frosting.

Makes 1 dozen.

Peanut Butter Cream Cheese Frosting

1 (8 ounce) package cream cheese
1/2 cup creamy peanut butter
3 1/2 cups powdered sugar
1 teaspoon vanilla
2 tablespoons whole milk or cream

Blend cream cheese and peanut butter together until smooth.  Gradually add powdered sugar and beat on low until blended, add vanilla and milk and beat until creamy.
