That Salad



This is a fresh spinach salad with a light citrus dressing that is perfect for summer.  In my neighborhood we call it "That Salad".  Before I get started with the recipe let me tell you that if you do not have a microplane you really need to invest in one.  I use zest in so many of my recipes and a microplane is just the right thing to use.  It is so much better than just a regular fine grater.  It makes zesting so easy and with a microplane you don't get the more course zest so it doesn't taste like you are biting into peel.  You just get a lot of flavor.  I also use it for ginger and garlic.




Sugared Pecans

1/8 cup sugar
2/3 cup pecan halves

Mix sugar with pecans in small skillet and cook on low until the sugar melts.  Mix well, until coated.  Spread on foil to cool, break apart.

Citrus Dressing

1/4 cup vegetable oil
4 T. white wine vinegar
Juice of one lime
zest of one lime
2 tablespoons fresh orange juice
1 tablespoon orange zest
3 to 5 tablespoons sugar depending on how sweet you want your dressing.

Mix dressing in air tight jar and chill until serving time.

Spinach Salad

Two bags fresh spinach (I really like baby spinach, much smaller bites)
one pint strawberries, sliced.
1/2 of a small red onion, diced.
2 oranges, cubed. (may use 2 cans of mandarin oranges)
handful of craisins

Mix salad without dressing and chill until serving. When ready to serve toss with dressing and top with pecans.
