Watermelon Fire and Ice Salsa


Juicy watermelon replaces tomatoes in this salsa that's cool and spicy, perfect for a summer barbecue.  Serve it with tortilla chips, or use it as a topping for grilled chicken or fish. 




This recipe comes by way of Karen, a wonderful neighbor, who says she got it from Allrecipes.  I have my blog posts figured out several months ahead and then if something blog worthy comes up I will interject it.  Well I've had this on my schedule for some time and was excited to post it because I had never heard of it before I had it at my neighbors house.  O.K.,  for those of you who know what Costco is (a big warehouse store),  well they sent out their Costco Connection Magazine this week and what do you think is in it?  You guessed it,  the recipe for Watermelon Fire and Ice Salsa.  Too funny.  The post goes on anyway and you will love it.

Watermelon Fire and Ice Salsa

3 cups chopped watermelon
1/2 cup chopped green bell pepper
2 tablespoons fresh lime juice
2 tablespoons fresh chopped cilantro
1 tablespoon chopped green onion
1 tablespoon chopped jalapeno pepper (you can sub a milder pepper if desired)
1/2 teaspoon garlic salt

In a large bowl, combine all ingredients and mix well and serve.  If you make it ahead it is best kept in the refrigerator because you want it really cold.
