The European or English cucumber has a thin peel which is crisp and not waxy. It usually comes in a plastic wrapper. This is the cucumber of choice for this dish and usually available in all grocery stores. To slice again I used my salad shooter or you can use a mandolin. If you do slice by hand make the slices very thin. This salad is best made ahead so it can marinate and chill for a couple of hours.
1 whole european cucumber, not peeled and thinly sliced
1/2 cup water
1/4 cup vinegar
6 tablespoons sugar OR splenda
3 green onions, finely sliced
1/8 cup chopped curly parsley
sea salt and pepper to taste
Wash, dry and slice cucumber and add the other ingredients to bowl. Chill in fridge for at least an hour or more. You want it really cold. This salad becomes tastier as it sits. You can store it in the refrigerator for about five days.
