Three Bean, Baked Bean Casserole

Every year our neighborhood has a summer party.  We have a unique neighborhood because it is one long street with three small circles running off it and only one outlet so the kids can run amok.  I say that in a good way.  It's like a 50's neighborhood, perfect for kids.  It's the highlight of the summer and the food is fantastic.  Everyone brings their own meat to barbecue along with a side or dessert.  Of course you know I usually bring dessert.  The kids always ask if I am bringing cupcakes.  I love it!  This is a recipe that Angela brought one year and everyone couldn't get enough of it.  It's thick and rich and a  "oh those are good beans" type of casserole.





Baked Beans

1 15oz. can baked beans (I use Bush's)
1 15oz. can butter beans, rinse and drain
1 15oz. can kidney beans, rinse and drain
3 slices bacon, slice in small pieces
1/2 medium onion, diced
1/2 green bell pepper, diced
1/4 cup brown sugar
1/4 cup ketchup
1 tsp. Worcestershire sauce
4 oz. Velveeta cheese, diced in small pieces.  (you can buy a small 8 oz. box so you don't have all this cheese left)
Fresh grated Parmesan sprinkled on top

Dice bacon, onion and bell pepper.  Brown bacon and remove from pan and then saute onions and bell pepper in bacon grease until tender.  Combine in a casserole dish with all the remaining ingredients.  Sprinkle with Parmesan.  Bake uncovered at 350 for around 1 hour.
