Get your blender out because you will definitely want to make a watermelon cooler. It's fast and easy and such a refreshing change from soda pop, perfect for a summer party.
4 cups cubed seedless watermelon, rind removed
1 1/2 cups rainbow sherbet
zest of one lemon
1 1/2 cups cold water
watermelon wedge and mint, for garnish if desired
crushed ice for glass
Put watermelon, sherbet, lemon zest, and water in blender and blend until smooth. Serve over crushed ice and garnish with a watermelon wedge or mint or both. Serves four depending on glass size.
