Strawberry Mango Gazpacho
Some people call this the dog days of summer. I guess that means it's hot. Whatever you may call this time of year, I love it. I'm a lizard. How did I end up in Utah all these years? For those of you who want refreshing items on your menu this does the trick. It's also a great treat if your cutting back on the fat in your diet. The bright colors alone make you feel like you are putting something healthy and nutritious into your body. Have fun and experiment with your choice of fruit and veggies to make chilled gazpacho, soups and smoothies.
Strawberry Mango Gazpacho
12 oz. of cucumber seeded and sliced
3 cups strawberries, sliced
1 T. lime juice
2 mango's, skinned and cubed
Combine all ingredients in a food processor and pulse until the desired texture that you want is achieved. If you don't have a food processor you can also use a blender. Chilled soups should always be in the refrigerator for a couple of hours so they get really cold before serving. Garnish as you please with mint, lime slice or strawberry slice.
