Wraps For Two


 It's so hard to cook for only two.  You end up throwing food away as you're thinking of all the people starving in this world.  I have tried to cut down many of my recipes but of course you can't always do that.  I have learned which leftovers I can freeze without compromising taste.   

This is a very tasty wrap especially when I added the chili verde salsa.  I had bought some Target brand (Archer Farms) chili verde salsa (it's green) the last time we had company and just used it for chips and everyone loved it and asked if I made it.  I had to confess, yes I do make a lot of from scratch recipes but come on when something is this good I will buy it every time.  Anyway, I spread it on these wraps and it was perfect.  I might even try some in a new sauce for my chicken enchiladas.   I like it because it doesn't have much of a kick to it.  I get the mild sauce. 

Wraps For Two 

4 uncooked bacon slices, diced
2 small tomatoes, chopped
2 tablespoons cilantro, chopped
1 cup firmly packed, chopped green leaf lettuce
1 avocado, chopped
2 tablespoons chopped red onion
1 tablespoon fresh lime juice
4 slices thinly sliced smoked turkey
4 slices provolone cheese
4 tablespoons Target brand (Archer Farms) chili verde salsa
2 - 10 inch spinach tortilla wraps

Fry bacon in pan or nuke in microwave.  Set aside on paper towel.  Combine avocado, tomato, onion, cilantro, lime juice and bacon in a small bowl, set aside.  Spread two tablespoons of chili verde on each tortilla.  Put two slices turkey and cheese on bottom half of each tortilla.  Divide avocado tomato mixture in half and spread on top of the turkey and cheese.  Divide and add lettuce to the tortillas.

FOLDING:  Fold right and left edges toward center.  Next, fold bottom edge toward center and roll until tortilla is completely wrapped around filling, seam side down.  Cut in half to serve, it's easier to eat and has a nicer presentation.
