Mini Pumpkin Poppers

This post will get you ready for Pumpkin Fest in October on SugarRush blog. So get ready if you are waiting for recipes with pumpkin in them. Now for this recipe, again with the dipping in butter and cinnamon sugar only this time they are Pumpkin Poppers. So Yummy. A perfect surprise for the kiddies as an after school snack. What am I saying? Of course you can sneak some before the kids come home.




Preheat oven to 350 degrees and spray mini cupcake pan with baking spray.

Ingredients for mini pumpkin poppers:

1 3/4 cups flour
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon allspice
1/8 teaspoon cloves
1/3 cup vegetable oil
1/2 cup brown sugar
1 egg
1 teaspoon vanilla
3/4 cup pumpkin puree
1/2 cup whole milk


Coating:

1 stick butter

2/3 cup sugar
2 teaspoons cinnamon

Add ingredients for mini poppers to mixer bowl and mix until batter is well combined. Fill sprayed mini cupcake pan 3/4 full with batter (I use the smallest scoop size). Using a scoop gets them nice and rounded and the same size and bake on 350 for 10-12 minutes. Let cool a few minutes and turn mini's out of pan. 

When cool enough to handle dip in melted butter and roll in cinnamon sugar and let cool. Don't cover them until they are totally cool because they will tend to get a little soggy because of the butter.
