Monkey Quick Bread w/ Mini Chips And Pecans

Banana Bread has a thick sweet batter that is full of mashed bananas, cinnamon, pecans and mini chocolate chips. Moist banana bread has stood the test of time. It is, as the name "Quick" Bread implies, quick to make. The dry ingredients mixed in one bowl, the wet ingredients mixed in another bowl. The two are combined and you are done. If you don't have the time to make your quick bread with the over ripe bananas you have on hand simply put them in the freezer and then thaw when you want to use them. They will keep at least 3 months in the freezer.

Preheat oven to 350 degrees.

1/2 cup soft butter
2 eggs
1 teaspoon vanilla
1/2 cup sour cream
1 packed cup mashed bananas (two to three depending on size)
1 cup sugar
1 3/4 cup flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cup mini chocolate chips
1/2 cup chopped pecans

Beat wet ingredients in mixer bowl or by hand. Add add dry ingredients and mix until combined. Pour into loaf pan that has been sprayed with cooking spray. Bake on 350 for about an hour. Test with cake tester. Let rest in pan for 10 minutes and then turn out on to cooling rack to cool completely.
