Pumpkin Chocolate Chip Cookies
HAPPY HALLOWEEN EVERYONE!
Hope your Halloween is sweet and not so spooky. This is my favorite pumpkin cookie recipe and so I thought I would share it with you. It is actually the same recipe as my Pumpkin Chocolate Chip Bread but you would never know it because the texture is so totally different. Of course the baking time and temperature are different. They are so yummy and totally speak of Halloween.
Preheat oven to 375 degrees.
Ingredients:
1 1/3 cups sugar
1/3 cup shortening
2 eggs
1 cup pumpkin
1 3/4 cups flour
1/2 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon cloves
1/2 teaspoon salt
3/4 cup mini chocolate chips
Directions:
Cream sugar and shortening until fluffy. Add eggs and pumpkin and mix. Whisk dry ingredients together and add to the mixture. Add mini chocolate chips. I used a two tablespoon cookie scoop. Place cookie dough two inches apart on a parchment lined baking sheet. Do not flatten cookie dough. Bake on 375 degrees for about 15 minutes. You should get about 20 cookies at this size. Cool in pan for 10 minutes and then place on cooling rack until totally cool.
