Pumpkin Waffles
Give the kids a treat for Halloween breakfast and make these delish pumpkin waffles. They are light and mildly pumpkin flavored and spiced. If you want to kick them up a notch you can use cranberry honey butter (recipe on my blog, under spreads) or serve with fresh sliced pears and hot maple syrup. I wouldn't even be opposed to a sprinkling of pecans on top. The possibilities are endless but the truth is they are tasty just the way they are.
Ingredients:
2 1/2 cups all purpose flour
1/3 cup packed brown sugar
2 1/4 teaspoons baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 teaspoons cinnamon
1 teaspoon ginger
1/4 teaspoon cloves
4 eggs
1 cup well-shaken low fat buttermilk
1 cup whole milk
1 cup canned solid-pack pumpkin
6 tablespoons unsalted butter, melted (can use salted butter, just omit the other salt in recipe)
spray cooking spray on waffle iron
Directions:
Whisk dry ingredients together and then add wet ingredients. Whisk until smooth.
Spray waffle iron with cooking spray and preheat.
I have a 7 inch in diameter waffle maker and this recipe made 8 waffles.
