Spring Salad For Two W/Orange Cilantro Vinaigrette
This is definitely a salad you want to make. It is so refreshing. The mixed spring greens are just the base of the salad, then just slice up the mango and avocado and sprinkle on the blueberries. It's now ready for the vinaigrette which in my opinion makes the salad. If you want to make a meal of it just add some grilled shrimp or poached salmon and have a side of crusty bread. Yummy
Ingredients for the salad:
3 cups mixed spring greens
1 mango
1 avocado
1/4 cup fresh blueberries
Ingredients for the vinaigrette:
2 Tablespoons fresh orange juice
2 Tablespoons fresh lime juice
3 Tablespoons canola oil or oil of your choice
2 Tablespoons honey
1 Tablespoon finely chopped cilantro
1 Tablespoon finely chopped red onion
1 teaspoon finely zested orange peel
Directions:
Combine all the dressing ingredients and shake to combine completely. Set aside and assemble the salad.
Spread spring greens mix in a shallow bowl or long plate. Peel the mango and avocado and cut into strips to arrange on the bed of greens. Sprinkle the blueberries on salad and drizzle on the vinaigrette. You will have plenty of vinaigrette so you may not want to use it all, depending on your taste.
