BLT Chopped Salad W/Avocado Cilantro Lime Dressing
You will definitely like this dressing and it's made with no oil or dairy plus you are getting extra veggies in your salad. Talk about a healthy salad. Well I guess that's if you don't count the bacon which you won't get that much of per serving. When I saw the recipe for this dressing it's just what I was looking for to go on my BLT salad. You will probably only use half of the dressing but it will keep for a couple of days. You can also use it for a dipping sauce or on tacos or enchiladas.
Ingredients for the BLT Salad
5 cups romaine lettuce - chopped
1 pint grape tomatoes - halved or quartered, depending on size
6 slices bacon - chopped, nuke in microwave
6 oz. feta cheese crumbles
croutons - store bought or home made, if you have good bread for home made croutons go for it, as many as you like and also to garnish on top.
Directions
Wash, chop and dry lettuce. Quarter or halve grape tomatoes depending on size. Nuke chopped bacon on paper towel in microwave until a little crispy. Put lettuce, tomatoes, feta cheese and half of the bacon into the bowl. Make the dressing.
Ingredients for the Avocado Cilantro Lime Salad Dressing
1 avocado, cut into chunks
1/2 english cucumber, peeled and chopped
1/4 cup cilantro, chopped
juice of 1/2 lime
juice of 1/2 lemon (watch out for seeds)
1/4 cup water.
1/2 teaspoon salt (I used freshly ground sea salt)
pepper to taste, if you want
Cut up the avocado, english cucumber, cilantro, and put into a food processor. Add the lemon, & lime juice, water, and 1/2 tsp salt and then pepper if you choose. Blend really, really well until creamy.
Toss the salad:
Add the croutons to the salad bowl. I would start with only using one third of the dressing and toss the chopped salad really well and then add more dressing if desired. Taste and adjust the salt and pepper. Top with the rest of the bacon and add more croutons if desired.
