Spinach & Peach Salad with Peach Dressing




It seems that in the summer months we always have an over abundance of fresh fruit and veggies hanging around the kitchen and it's just fun to put a few together for a healthy lunch or as a side salad with chicken or fish on the barbecue. We really liked this combination of spinach, peach and red grapes. I made a light peach dressing with honey and lemon that is healthy and delicious. The salad recipe is for an individual serving, just multiply for a salad bowl. The salad dressing recipe will be plenty for a large bowl of salad.







This salad tastes best when all ingredients are really chilled before assembling. I would suggest making the salad dressing first and putting it in the fridge while you make the salad.












Ingredients for an individual serving:
a good handful of  baby spinach
ten seedless red grapes cut in half
1/2 large peach, peeled and cut into pieces
1 teaspoon red minced onion
1 tablespoon feta cheese crumbles
1 tablespoon chopped pecans

Salad can be made in a large salad bowl as well, just multiply servings. You will have plenty of dressing and any that is leftover can be saved for a couple of days. You can also use it as a marinade for chicken or fish before baking.

Ingredients for the peach dressing:
1 medium peach, peeled, pitted, and sliced
2 Tablespoons canola oil
1 Tablespoon honey
1 Tablespoon fresh lemon juice

Blend in blender until smooth. Serve by spoonfuls on individual servings, or if making a large salad just toss some in before serving.
