Pumpkin Streusel Muffins
Well it has been officially fall for a couple of days so I think it's time to bring out some more pumpkin recipes. I don't know what this relationship is that I have with pumpkin. As soon as the weather starts to cool I want to bake everything pumpkin. I feel like a bear and want to eat it all getting ready for hibernation. These muffins are definitely a keeper. They are moist yet somewhat fluffy with a bit of streusel crunch in the middle and on top. Drizzle on a little vanilla glaze and it completes a beautiful picture.
Preheat oven to 350 degrees F.
Ingredients for streusel:
3/4 cup brown sugar
1/2 of a stick of butter (cut slices)
2 teaspoons cinnamon
1/4 cup flour
Mix these 4 ingredients together to make a crumbly streusel. Use a pastry blender or your hands. Set aside.
Ingredients for Muffins:
1/2 cup granulated sugar
1 cup brown sugar
1/2 cup butter
2 eggs
1/2 cup plain greek yogurt
3/4 cup pumpkin
2 cups flour
1/4 teaspoon baking soda
1 Tablespoon baking powder
1/2 teaspoon cinnamon
1/4 teaspoon cloves
1/4 teaspoon nutmeg
1/2 teaspoon salt
Cream sugar and butter until fluffy. Add eggs, pumpkin, yogurt and mix until well combined. Add dry ingredients and beat until well combined.
Line cupcake pan with cupcake liners. Put 2 tablespoons of batter in cupcake liners, then add 1 tablespoon streusel on top, then add 1 more tablespoon of batter on top of streusel and then add 1 tablespoon streusel on top of that. If you have scoops of those sizes by all means use them because it makes it so much easier and you get the correct amount each time.
Bake in preheated over, 350 degrees for 18 minutes.
Ingredients for the glaze:
1/2 cup powdered sugar
1 teaspoon vanilla
1 teaspoon milk or more.
Mix ingredients together in small bowl. Add more milk one teaspoon at a time until desired consistency.
Drizzle on to warm muffins after you take them out of the oven.
Recipe makes 18 regular cupcake size muffins. If you have a large muffin size pan you want to use you will have to adjust the amount of batter that goes in the cups therefore getting less muffins.
