Cranberry Pecan Oatmeal Cookies






And so it begins on the blogs, an abundance of Christmas Cookie recipes and here is one you can add to your stash. Really good anytime of the year but dip a corner of the cookie in white chocolate and it's just fancy enough for your cookie platter on Christmas Eve. 






INGREDIENTS

1 cup salted butter (2 sticks)
1/2 cup light brown sugar
1/4 cup granulated sugar
1 egg
2 teaspoons vanilla extract
1 3/4 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon baking powder
1/4 teaspoon cinnamon
1 1/2 cups old fashioned oatmeal
1 1/2 cups dried cranberries (craisins)
1/2 cup chopped pecans
vanilla Candiquick or similar baking white chocolate for dipping

DIRECTIONS

Preheat oven to 350

Beat together butter and sugars until well combined.  Add egg and vanilla and mix.

Add flour, baking soda, baking powder and cinnamon and mix until combined. Add oatmeal and mix until well combined.

Stir in craisins and chopped pecans.

Place tablespoon size balls of dough on parchment lined cookie sheet. (I used a small cookie scoop)

Bake for 8-9 minutes. Yes that's all or your cookies will get to crispy. They may look undercooked but trust me and take them out of the oven. Do not over bake.

Let the cookies cool for a couple of minutes on pan and them put them on a cooling rack to finish cooling.

If desired, melt Candiquick in a small bowl and then dip a corner of the cookie and lay on parchment until dry.

Makes 3 dozen.
