Peach Skillet Dump Cake
Peaches, my favorite fruit. Had to try this recipe but I made a few changes. Peaches are coming in here in Utah, not on my tree yet. My daughter has several trees and one has come in already and she made a ton of peach jam that's enough to last them all year.
We serve our dump cake with vanilla bean ice cream. If you eat it warm or cool, with or without ice cream, it's delish all the way.
INGREDIENTS
8 cups peaches, peeled and sliced
1 teaspoon vanilla
2 tablespoons cornstarch
1 1/4 cups flour
3/4 cup brown sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 teaspoon cinnamon
1 tablespoon sugar for topping
1 stick butter cut in 1/4 inch slices for topping
INSTRUCTIONS
I used my 9 inch cast iron skillet. I'm sure any oven safe 9 inch skillet will work. In your skillet mix peaches, vanilla and cornstarch. Its ok if your peaches are piled high, they will bake down.
In a small bowl mix flour, baking powder, sugar, salt and cinnamon. Sprinkle mixtures over peaches.
Sprinkle 1 tablespoon sugar over flour mixture and then lay down butter slices.
Bake at 375 degrees for 45 minutes.
Serve warm or cool with vanilla bean ice cream. Both ways are delicious!
Serves 6-8 people, depending on portion size.
