Honey Turkey Croissant Sandwiches w/pineapple cream cheese spread







These are great sandwiches for an Easter Brunch, shower, ladies luncheon, or any get together for that matter. I made them for a bridal shower I was having. They have sweet honey turkey on them with homemade pineapple cream cheese spread. Add a piece of leaf lettuce and voila, a party sandwich. The Honey Turkey is from Costco and it's really good. Also their is no better place to get your croissants than Costco. They are fresh and wonderful and you can't beat the price.

Sorry I didn't get a picture of the spread but you get the gist. I wasn't going to post these but then anything that is so good and so easy for a party I had to post. Multiply the ingredients as needed for more croissants.

Ingredients

1  1/2   boxes cream cheese (12 oz.)
1 small can crushed pineapple (well drained)
3 Tablespoons powdered sugar
3 Tablespoons sliced green onions

Honey Turkey from Costco (one package should be plenty for 12 croissants)
12 Croissants (one box) from Costco

Drain pineapple really well, set aside. Slice green onions, set aside.

Mash all 4 cream cheese spread ingredients together or use hand mixer to cream. Chill in fridge.

Slice croissants horizontally. When you are ready to assemble sandwiches put spread on each side of croissant, add 1 to 2 slices of turkey then add a slice of green lettuce. You can finish with a decorative pick to hold sandwiches together. It's your choice weather you want your sandwiches whole or cut in half.

Also you can make them ahead of time. Just wrap the platter with handi-wrap and put in fridge. Take them out to serve 20 to 30 minutes ahead of time.
