Autumn Chopped Salad
I love chopped salads! There is something about it being chopped up very small. It just seems to be so much easier to eat and you also get more different pieces of stuff on your fork. This one has a fall vibe with the apple and pear. You could use a dressing of your choice but I used poppy seed. A light dressing is probably best and it's good not to overload it. We paired our salad with the Baked Potato Soup on my blog. Yummy!
INGREDIENTS:
It's best to have all ingredients chilled.
4 cups chopped romaine
1 Bartlett pair, diced
1 apple, diced
5 slices bacon, cooked and chopped. (Lay bacon on paper towel and cover with paper towel and nuke for 2 minutes. Chop or cut with kitchen shears).
1/4 cup Craisins
1/3 cup chopped pecans
1/4 cup feta cheese
Poppy seed dressing, as much as desired
Combine all ingredients in bowl, mix and serve.
