Fresh Corn Salad
This is such a fresh salad and only takes about 10 minutes. Great for a barbecue, just sitting on some chopped lettuce or Mr. B says it's even tastes good with a sandwich. Serves 4-6.
Ingredients
3 ears sweet corn, shucked
1 pint cherry tomatoes, halved
1 avocado, chopped
1/4 cup chopped cilantro
2 green onions, sliced
1 tablespoon olive oil
Juice of 1 lime ( if it is way juicy only use 1/2 the lime)
Salt and pepper to taste
Directions
With a sharp knife, cut the kernels off the cob, cutting close to the cob.
Place the corn kernels in a large bowl, you don't have to cook the corn. Add the tomatoes, avocado, cilantro, and green onions. Drizzle with olive oil and lime juice and stir very gently. Season with salt and pepper, to taste.
