Banana Chocolate Chip Snacking Cake

 

You know how sometimes, at the spur of the moment, you want to whip something up for a cool weathered evening. Well this is it! I added pecans to this recipe but they are totally optional, or add a different nut if you like. As for the chips you can add dark, semi-sweet or milk chocolate, it's up to you.




Preheat to 350 degrees
8 or 9 inch pan, sprayed with baking spray

INGREDIENTS
  • 1/2 cup butter, very soft
  • 1 cup brown sugar
  • 2 eggs, beaten
  • 1 teaspoon vanilla
  • 3 large ripe mashed bananas
  • 1  3/4 cups flour
  • 1 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 3/4 cup chocolate chips (I used milk chocolate)
  • 1/4 cup pecans, chopped
  • chopped pecans and chocolate chips for sprinkling on top of batter

DIRECTIONS

1. Beat butter and brown sugar to light and fluffy, then add eggs and vanilla to blend.

2. Add in mashed bananas until thoroughly combined.

4. Gradually add flour mixture, mix just until combined.

5. Fold in chips and nuts until combined.

6. Sprinkle pecans and chocolate chips on top. Tap gently on top to sink them into the batter a little.



Bake on 350 degrees for about 40 minutes. Test cake for doneness because every oven is different as well as every pan or baking dish.
