Roasted Brussel Sprouts & Sweet Potatoes

 

I know not everyone likes brussel sprouts but I love them. It's probably the only thing Mr. B doesn't like as far as food goes. This is a great side in the fall or any time of year. It's really a no recipe recipe as far as measurements go. It all just depends on how many people you are serving. Down below I'll give measurements for about 6-8 people.



INGREDIENTS

  • 1 large sweet potato, peeled and chopped
  • 15 small brussel sprouts, rinsed and halved
  • candied or plain pecans, as many as you want
  • craisins, as many as you want
  • 2 or 3 strips of bacon, nuked and then sliced. 
Preheat the oven to 400 degrees. Put halved brussel sprouts and sweet potatoes into a sheet pan and drizzle with olive oil.  Sprinkle with very little salt and toss to coat everything. Roast in 400 degree oven for 35 minutes or so until tender. Take out of the oven and add craisins, pecans, bacon, toss and dump it into a bowl and serve. It's that easy.
