Hamburger Soup

 

Another comfort meal right here. Ground beef and about seven veggies in a tomato and beef broth sure make a tummy warm. The only thing missing is a large piece of crusty bread, but then that's an easy fix. 



INGREDIENTS

  • 1 tablespoon olive oil
  • 1 lb ground beef
  • 1/4 cup leeks or onion, chopped
  • 1 clove garlic or garlic powder
  • 3 tablespoons tomato paste
  • 3 carrots, chopped
  • 2 stalks celery, chopped
  • 1/2 of a green bell pepper, chopped
  •  4 Yukon potatoes
  • 1 can stewed tomatoes, cut up with scissors in the can
  • 1 quart beef broth (boxed)
  • 3 teaspoons fresh chopped parsley
  • good handful of fresh green beans, chopped
  • salt & pepper to taste
  • a couple sprinkles of dry Italian seasoning
DIRECTIONS

Saute and brown and chop apart ground beef for about 5 minutes. Add leeks or onions and garlic. Brown for another 6-7 minutes.

Add the tomato paste and stir until incorporated into the beef and onions.

Add the carrot, celery, bell pepper, green beans, and potatoes, then top with stewed tomatoes, and stir.

Add beef broth and dry seasonings, and stir.

Increase heat to a boil, then reduce heat to low medium and simmer until potatoes and beans are tender, about 25 minutes.

Give it a taste and see if you need additional seasoning.
