Banana Bread from The Food Network
I have a few banana bread recipes on my blog but this one is the one I keep making. It is from The Food Network and has the simplest ingredients and tastes the best. It is very moist and has that really good banana flavor. I guess its because it has 4 bananas in it. Make sure they are nice and ripe.
- 2 cups flour
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1 teaspoon salt
- 2 eggs
- 1 cup sugar
- 4 very ripe bananas, mashed
- 1 teaspoon vanilla
- 1/2 cup vegetable or canola oil
- 1 teaspoon cinnamon
Preheat oven to 350 degrees F.
In a medium bowl whisk together flour, baking powder, baking soda, and salt. Set aside.
In a large bowl, cream together the eggs and sugar. Stir in the mashed bananas, vanilla, oil and cinnamon.
Stir in the flour mixture, a third at a time, until just combined.
Pour the batter into a 9X5 loaf pan or glass. Bake for about 1 hour.
If you don't want one large pan this recipe will fill 3 mini pans but you will only bake it for 35 minutes or so.
