No Bake Energy Bites

 

We had an activity at church about food storage and using items we had. We had to bring something made up and the recipe to go with it. I looked around the web and came up with these No Bake Energy Bites. So simple to make and with few ingredients. The kids will like them.

There are many other optional ingredients, such as coconut, chopped nuts, protein powder, etc. Use you imagination with what you have on hand and adjust recipe accordingly.




Ingredients:

1/3 cup honey ( I used raw and unfiltered, but whatever you have)

1/2 cup peanut butter (or almond butter)

1 cup old fashioned oats (not minute)

1/2 cup mini chocolate chips

1 teaspoon vanilla


Directions:

Blend honey and peanut butter together, (best done with back of a spatula) until creamy. Add oats, chips and vanilla and blend thoroughly. Wet hands with water and shake off so batter won't stick too them. I use my smallest scoop and then roll into small balls and set on a wax papered pan. Cover with plastic wrap and refrigerate for an hour. Store in fridge.

You can also freeze them. To freeze them lay on pan with wax paper and put in freezer until frozen then put in a ziplock bag. I liked them really cold.
